You are quite rightly looking into the prospect of breeding your BC carefully.
There are a lot of things to take into account. Are you at home all day? Are you in a position to take back a puppy if the new owner can't cope with it, bearing in mind they often come back as 12-18 month untrained holigans.
You can register an Affix with the Kennel Club to have your chosen affix infront of the registered name. Details on KC website.
You shouldn't breed until she is at least 2 years, but first litter should be before 4 years.
She will need to be hipscored.
If she is CEA clear by parentage, the parents should be on a database
http://bordercolliehealth.com/CEAdatabase.html If they are not shown, ask to see the certificates. To ensure your puppies will be clear you will need to choose a stud dog that has been tested or lineage clear.
You need to know if she is show quality, if so the best way of improving her lines is to show her and get the opinions of experienced breeders as to her faults and what to look for in a stud dog to strengthen those and one that will be compatable to her lines.
There is nothing stopping you doing agility or obedience, but she would have to excel to prove herself in the sport.
There is a good book to read called The book of the bitch, very useful to give you all the general information you need, but it is not breed specific.
I would go along to a few shows just to look at the dogs on show and talk to people in general.
