I taught my Large Munsterlander male to come up on command. He is now 7 1/2 years old and dances around me before being the 'up' command.
When he is calm (easier said than done, I know ;-) ) you make him sit in front of you. Pat your chest, open your arms wide and say 'up', or whatever word you wish to use. Praise him enthusiastically, then tell him 'down' or 'off' or whatever word you wish to use. You may need to push him down. Once he is down bend over and clap and praise him again. You will have to keep doing this until he gets the message, but don't do it too often at the beginning. He has to learn what you want him to do. Being a Pointer he should learn quickly.
As to the toys problem, the easy answer, I'm afraid, is not to let the toys go anywhere near your feet :-p

when your dog goes to jump up turn away from him and ignore him until he calms down. Any attention he gets from jumping on you is a reward from you. once he gets the message you can say the command 'down' and then turn away, when he calms reward him with a reat or ask him to sit then reward him.
only calm behaviour gets attention/ rewards and once your dog realises this he will stop doing something that gets him no reward from you. make sure you tellall your visitors the same thing and this will re-enforce the training for you .
