I am trying to lose weight and was wondering if anyone had any low fat, quick & easy to cook recipes they would like to share ?

My fave at moment is roasted red peppers stuffed with couscous and olives:

1 large red pepper
cooked coucous (enough to fill the pepper)
6 olives (green or black) cut up

Deseed the pepper and stuff it with the couscous and olives
Roast in the oven (gas mark 5) for about 10 mins until the pepper is soft

YUM YUM...quick and easy

My fave (out of WW recipe book) is Pitta Bread stuffed with scrambled eggs, bits of bacon & chopped cherry tomatoes, nice as a snack or for a late breakfast/early lunch, very easy to make!  Try wholemeal pittas warmed in the toaster, grill the bacon & cut it into tiny pieces! Yum!

I do the frittata out of a ww recipe book:

fry 1 chopped onion, muschroom and bacon bits. Beat 6 eggs together in a bowl and add salt or parsley (or both), add the fried stuff to the eggs and mix well. On a medium heat add everything from the bowl back into the frying pan and turn right down. Leave on there for 5 minutes and then put under grill for 5 minutes. That works out about 5 points for a third and its really filling.

If you want anymore I have loads - been on ww for 2 years and have lost 3 stone! :eek:
