I replied to you last night but it vanished into cyber space and I thought someone else would reply so I was lazy and left it. Don't know if this is much help but this happens sometimes with dogs and my Cava, I think it is his speed that winds them up, they start off OK but as they play and he gets more excited they begin to dominate, for want of a better word, by putting head over his back and jumping on him. He gets excited/worried and runs more so it's a vicious circle. I deal with it by telling Cava to lie down to defuse things.
I had it from the other side with Braid who got very excited by fast moving dogs, did the same thing with him, made him lie down or watch me,funnily enough he was fine off lead so think it was more a frustration thing with him.
As I say I don't know how much this helps you, have you tried just telling him firmly which behaviour you don't like and praising what you do. He may be a bit worried by her speed if he has never been like this before

Have just had another look at your post, you don't suppose she has a urine infection or something hormonal causing her to give off strange smell. Might be worth checking, when I had awful aggression problems between 2 bitches they checked the one being attacked for anything on those lines
