Has anyone out there got a foolproof way of ensuring the bread for Christmas tea sandwiches is lovely and fresh? Is it still really nice when frozen and defrosted? I've never done that yet so am feeling unsure about it.
I would hate to end up giving folk something not very nice for their tea!!! :)

Part cooked baguettes work well.

Buy a cut loaf on a Monday, always freshest then. Put it straight into the freezer and it will be find. I find Warbartons keeps the best.
I buy proper bread, sliced at the Bakers, for Christmas. It defrosts very well but it's worth making sure that you freeze it without squashing - it never defrosts properly if my OH has just slung it in the freezer then chucked other stuff on top!!
The other bread I like are the mixed rolls from Somerfield (5 for £1) ciabatta, sun dried tomato, panini etc. I always bulk buy these when I'm passing and they are excellent even after freezing. Morrisons do something similar I think...
If you want to use bread for sandwiches remove it from the plastic bag before defrosting as it can go a bit soggy on the corners if you've got ice crystals in there. Split it into slices, put it on a board, and you can use it in about 10 minutes

I've actually just bought a Warburton's and shoved it in the freezer to experiment.
Any particular recommendations on defrosting? would you just defrost the whole loaf ? (I'm a bit of a freezer virgin!!) LOL.

Thanks, if it was up to me I'd definitely get ciabatta etc but some family members are very traditional and only ordinary white bread will do really!

I think that's the bit I'm worried about - the defrosting bit! In case it turns out hard or soggy or just different to what it's meant to be like!!! :) :)
