When I buy a whole chicken I use it as a meal then pick off all the chicken and make a Fricasse or similar then I scrape the bones and put scrappings and all skin into a pan of water with some bayl eaves pepper and some rosemary and get some stock then strain skin etc,& then I put in the bones and simmer this. I treat the dogs to the skin although all goodness is boiled out they do enjoy it. I leave the stock to cool then take the fat off the top and put in any veg I have laying around. then liquidise and add some cream.yum
