Quarantine is for 30 days entering Australia. The dogs will fly either directly into Sydney and held there (Eastern Creek I believe the name is) at the quarantine station.
Your local vet should be able to give you some of the information, but a good point of reference for what is involved is this website:

Your dogs will need to be vet checked to be confirmed 'fit to fly' and one very important thing to remember is the blood tests involved - if the dogs are having their boosters, ask your vet to exclude the leptospirosis part of the jab (only if you're flying out within 6 months of that being done) otherwise lepto will show up in their bloods and may not be given permission to fly.
