does anyone have any suggestions for something easy but really nice for boxing day dinner with the family? at the mo we're just thinking a chicken or something...

Overnight pork roast? It's my new Christmas dinner because it's so easy to do. We'll have that with some roasted root vegetables. Yumm. if your interested I'll hunt the recipe down on the web. I got mine from H F-Whittingstalls Meat cookbook but he nicked it from someone else.

Have you got a slow cooker? Im planning on making a pheasant casserole at my parents for boxing day lunch. Will have it with smoked oyster stuffing and a selection of roasted veg. Casseroles are easy, and make a change from a traditional roast. My gandma traditionally roasted a ham and did a cold buffet with this for boxing day lunch. My other grandma used to do a salmon.

Honey glazed gammon(big one)prepared and cooked a day or two before and chilled. Then baked potatoes maybe, salad and all the lovely pickles and relishes. It's help yourself all day and easy, peasey.

Gatecrash father in laws - thats my recipe for Boxing Day! Otherwise it would be cold meats, home made bubble and squeak , peas, corn , salad pickles - and then lots of chocolate cakes and cream!

Oh and the trifle I finish on xmas morning every year but hardly eat any till 28th! and the xmas oudding!

this is like the conversation my and hubby had the other day I was asking what we are having for xmas dinner. I am on a strict diet and probably wont be eating it, he isnt fussed and son doesnt really do the traditional turkey and stuff. Daughter does and wants the works. Hubby suggested we just dont bother as it is only the 4 of us this year and there was a almighty uproar as we all love the leftovers and pick on these for days. He decided I can cook leftovers then. We will just miss out the main bit and go straight to the picking lol :rolleyes:

My mum (and mum-in-law) used to have steak pie on Boxing Day. You just put it in the oven and forget about it..... anyone want burnt offerings ;)

thanks everyone for the ideas. steak pie (being made by the boyfriend for my whole family, how lucky am i?) is for new year, and while the pheasant sounds amazing the oysters not a great idea, parents loath anything fishy at all. i am making roast pork for the first time tonight for the br and flatmate so we'll see how that goes. i have already mastered roast chicken (i'm only a young thing with a manky student kitchen, please forgive my culinary inexperiance)
