
These are my 2 easy peasy failsafe recipes...
Banana & Chocolate Bread1 cup caster sugar
125g unsalted butter (softened)
2 eggs
1tsp vanilla extract
4 bananas (mashed)
2 cups plain flour
2 tsp baking powder
175g chocolate chips
Mix sugar, butter, eggs, vanilla extract & bananas together. Add the flour & baking powder and mix well. Stir in chocolate chips. Put mixture in greased 2lb loaf tin and bake at 180 degrees celsius for 1hr 15 mins. Leave to cool in tin for 5-10 mins and then transfer to cooling rack.
Double chocolate muffins100g plain chocolate
50g cocoa powder
225g self raising flour
50g soft brown sugar
1tsp baking powder
50g plain chocolate chips
50g white chocolate chips
225ml milk
4 tbsp olive oil
1 egg
Preheat oven to 220 degrees celsius
Break the plain chocolate into a heatproof bowl set over a pan of simmering water*. Melt the chocolate, stirring occasionally. remove the chocolate from the heat and, using a wooden spoon, stir in the cocoa powder, flour, baking powder, brown sugar, chocolate chips (plain & white), milk, olive oil and egg until well blended. Divide mixture between muffin cases and bake for 15 minutes until well risen and firm to the touch.

this is what the recipe (as given to me by my mother) states. In reality, I'm too lazy for all that so I wing the chocolate in the microwave and give it short bursts until it's melted, stirring every 30 secs or so ;)I also have a recipe for the
