I am after a really really scrummy recipe for Cottage Pie and wondered if any of you cooks out there might like to share one with me, in nice simple step by step directions!!  ;-)

Lean minced beef
Onion
Carrots
Tin of sweetcorn
Frozen peas
Small tin of baked beans
Bisto rich gravy granuals
Mashed Potatoes
Grated Cheese
Lea & Perrins

Brown mince and onion in a pan.  Add carrots, gravy granuals and water.  Simmer until meat and carrots are cooked. Transfer to an oven proff dish with a slatted spoon.  Add frozen peas, sweetcorn, baked beans and a dash or two of lea & perrins. Mix together, topp with mashed potato and sprinkle grated cheese on the top.

Put in oven around 180 degrees for about 30 mins.

Any of the vegtable ingredients can be removed or replaced if you prefer.

Serve and enjoy.

Sorry, I do the L&P and baked beans too - veg if we're feeling healthy, beans if we're feeling trashy. :D

:-D Chloe- That is my kind of recipe!!!
- By Charanda [de] Date 25.01.06 14:04 UTC
Thanks everyone - ChloeH, that is usually the exact recipe I follow however I'm feeling like branching out and being adventurous!!

One question - how much water do I need?  Just enough to cover the mince and onion I'm presuming but don't want to get it wrong??

Also, I've got a brand new food mixer in the cupboard which I have never used yet (only had it a year) and wondered - can you do mashed potato in one??  I've been too scared to try incase I break the thing!!  ;-)

Oh dear - I do sound like Can't Cook - Won't Cook!!  :D
- By LJS Date 25.01.06 14:13 UTC
Yes the food mixer will be fine to make mashed spuds but I prefer using a hand masher as the mash is more homemade like than whizzed :) (Another way of describing it is lumpier I suppose :D :D )

I also put a good slug of red wine into it as well ;)
- By Charanda [de] Date 25.01.06 14:20 UTC
Thanks LJS - I love mashed potato but not too keen on lumps, like it nice and smooth so I'll give the food mixer a whizz and see how I go (it would be nice to find a use for it) ;-)

Mmmm slug of red wine (straight into my glass)!!  :D

I do mine with minced beef (with fat drained off after cooking) -  onions and garlic - tin of chopped tomatoes - tin of baked beans - beef stock cube and a splash of red wine.  I find with the tomato juice and bean juice I don't need to add anymore water.  One thing... let the filling cool right down before putting the mash on the top or it'll sink and/or the juice from the meat will come up through it while cooking.

Man I'm hungry now  LOL
- By Charanda [de] Date 25.01.06 14:22 UTC
Oooh thanks Surannon for the good tip - I could merge your idea with the tomatoes and baked beans with the other recipe and just not have to worry about the water measure!!  :D

I'm going to make this on Friday as we always used to have Cottage Pie at home as a kid on a Friday and it feels like a good day for it!!

MMmmmm I'm hungry now too!!!  ;-)
- By sandrah Date 25.01.06 14:36 UTC
Yes, just enough to cover.

Don't ask me about the mash though, I buy Waitrose extra creamy mash out the chiller :D

I just made a cottage pie a few nights ago.

This is what i do.
Boil the potatoes,
chop 2 medium carrots, boil in water 15 mins
Sunflower oil just a drop, fry one large onion (chopped)for about 5 mins until starting to soften, then add the mince and stock, (for the stock 2 oxo cubes and 1/4 pint of water)add salt and pepper to taste. Drain carrots and add to mixture,
Put meat mixture into oven proof dish.
Mash potatoes (I use a potatoe ricer, no lump at all) drop milk, and butter salt and black pepper
Put on top of mixture put on oven 190C 25 to 30 mins until golden and chrisp, add cheese (if you like) for last five minutes.  Really warming comfort food, hope you enjoy yours.

Just or a change on cottage or shepherds pie sweet potato:cool:
- By Soli Date 25.01.06 17:34 UTC
I did a sweet potato/potato mixed mash for the top once and it was soooooo good :D
- By kazz Date 25.01.06 17:50 UTC
Make a normal pie but add small (I chop mine) pieces of apple into the meat mix. And cheese to the potato on the top gorgeous and the secret ingrediant a little bit of worcster sauce in the meat added to taste. Yummy.
