Yesterday and the day before I was out walking my bitch Amber, first day we bumped in to a lady and her lab who played with Amber and then got a bit excited and tryed to mate her, this happened on the second day too, I don't understand this has she was in season at the beginning of July for about 3 weeks surely she can'tbe coming in season again is this possible?

From experience, I'm always a bit pessimistic about pyometra, but I would be concerned that she may have an infection?  Don't want to panic you, but worth bearing in mind.

Edited to add: Infection smells can often confuse inexperienced males into thinking a bitch is in season.

Is there any other signs of infection that she would be showing she seems very fit and healthy

A closed pyo can be hidden until it becomes life-threatening.  Maybe check her temperature, and watch out for excessive drinking?

Absolutely not trying to panic you or say that it's the case with your girl, just something to bear in mind if the last couple of days' activity are particularly unusual.

Could it be that the lab is young and like most young males when they get excited they don't think with their brain and just got a bit carried away ! Or, sometimes dogs get a bit confused about the smell from anal glands, could it be your bitch may need her emptied.
I often bump into a GSHP where I walk my dogs and he NEVER thinks with his brain and always is convinced my bitch is ready to be mated. Been like this since we first met him when he was just a puppy and that was nearly 3 years ago now. You would have thought he would have got the message by now !

My Henry fell in love with a Dobermann at ringcraft and got so excited trying to mate her that he was sick and had to be taken out to the car!!! He's a Cavalier, imagine the puppies!!!!!

My dog used to try and hump everything until we had him neutured.

If you haven't bathed her since her season, it might be worth doing, even if it is only the back end.

Some bitches just have that scent that males like.  Males used to always like my girl Dilita, no matter what the time of year, she was just very sexy :d

Its not always just the males either. My two girls, mother and daughter, quite often climb onboard each other. Mainly mum does it to daughter, but I think she thinks its to get her playing :D Either that or she's gone the other way ;)
