I am looking for a young whippet, several months old and already housetrained, for my elderly parents, whose 13 year old whippet has recently died. Unfortunately they live in a 3rd floor flat so do not feel they can housetrain a brand new puppy, but a young whippet already trained would find a good home with them, with plenty of walking on lovely open parkland (not for racing, showing or breeding). Preferably a bitch.

Why don't you try your local rescue centre, they are usually jam packed with greyhounds, whippets, lurchers etc.  That's where I got my boy from.  He was house trained, but didn't understand any of the other basic commands like sit.  :)
