My rhubarb is getting out of hand :D
I've decided to make some jam but can't find a recipe (actually, I can't find my cookbooks

) Does anyone have a good recipe for me to try? :)

Hi Lindylou, here's one I found in mum's old recipe book for rhubarb and ginger jam.
4lb rhubard washed and cut up
3lb sugar
Lemon juice (sorry, she doesn't say how much)
2 tsp ground ginger or 1oz bruised root ginger tied in muslin
Put rhubarb and sugar in a bowl and leave to stand overnight. Put in a pan, add lemon juice and ginger, bring to the boil and boil rapidly for 10-15 mins. until the jam sets when tested.

If you've got tons of the stuff it freezes well, I don't even blanch it. Just chop into chunks, bag it up and sling it in the freezer. I love rhubarb we are having some tonight for pudding. :-)
I went to the shops today to get some loaf sugar, as stated in the rhubarb and orange recipe. I couldn't find it. Does it have another name?

I think its an old receipe and they had sugar loaf in the "olden days" :D :D :D but I think its just preserving sugar I had another thought about what you can do with your excess - you can make rhubarb wine :D :D :D I think ive got a receipe for it, let me know if you want it.

I've got tons of the stuff - and I'm the only one that eats it. That's why I thought of making jam.
I remember drinking a VERY small glass of rhubarb wine and not being able to stand up a few years ago.

:D Maybe I should try it again :D :D :D

Ah - ha but I have dropped 1 size you know...now back into those size 12's! :D
I well remember size 12. I'm still putting on the weight. 3 years ago I was a size 10. Now I'm a 14. And rising
