Stop & correct him/her then set off again if it's a puppy or young dog the judge will probably let you have a second chance or make allowances for it I know I would

turn round and walk bk about 4 or five steps then turn bk round and continue the walk/run

When you start off again go at a slightly slower pace. as soon as you feel your dog is going to jump, slow down a little.
