Hello,
This may sound odd but anyone got any receipes for stuffed roast tomatoes? I roasted some tomatoes the other day and they wer lovely...I am sure there must be some receipes somewhere?

Take it from me - a survivor of Superwoman etc etc etc - life is DEFINITELY too short to stuff a tomato :D :D :D

(but you can use the big beefsteak ones, scoop out the flesh, add to cooked rice & garlic & stuff back in again & roast.....)

I stuff my peppers with pinenuts, goats cheese, raisins and whatever herbs I have (usually basil, parsley or corriander), I have also used this mixture to stuff tomatoes (but as Margot says tomatoes are too fidily (sp??) to stuff, peppers are easier).  :)

I used to add bacon, a few herbs and some breadcrumbs to stuff tomatoes - they always tasted lovely!
