I'm on my own 3 nights a week when Claire goes to her dad's and I've found lately that I just can't be bothered cooking for one. I find that I'm just not enjoying the thought of eating at all. Does anyone have any ideas what I can cook that might just bring my appetite back?
Oh, I don't like curries or pasta. Love salads though. :D (A bit too cold for this time of year though ;) )
Marks and Spencers and Tesco's (Finest range) do some very good meals for one, I often buy them for Hubby if I'm coming in late, and have found them to be very good value and quality. A lot of them are microwaveable too, so even quicker :D

Definately Marks and Spencers, you will be spoilt for choice.......bet you don't go back to cooking for two afterwards though :)

Stir fry? Like a salad, but hot ;) All the supermarkets sell packs of the ready chopped vegetables, you can get pre-cooked noodles to throw in, small sachets of sauce - just add chicken/turkey/beef/pork/prawns/etc. and Bob's your uncle, 10 minutes from start to finish. Tasty and healthy, what more could you want.
Jacket Potatoes? Chuck in the oven and forget for a while, then add all manner of things - baked beans & cheese, canned meat in sauce, prawns - or the best ever, butter and salt - oops, was staying reasonably healthy up to there :D

Thanks. I eat a lot of stir-fry when Claire's away - she won't eat it ;) Forgot about jacket potatoes though.M & S is too far to travel to, but Tesco's is close by, I'll go and have a look. I tend to make a pot of home-made soup, but I've sickened myself with it. :D

Could you cook something like chilli or bolognese and freeze it in portions. Then all you would have to do is to thaw/reheat it and serve with jacket potato/rice/pasta etc. You could also do this with casseroles etc. :)

Mmmmmmmmm... that sounds like an idea. I love casseroles. Don't much fancy cooking in this heat though. Today was 41C (106F)!

When I make a chilli or bolognese I always save a portion in the freezer for nights when I'm on my own. So easy to boil some pasta or stick on a jacket spud :P

My husband works away and normally my daughter won't eat what i eat so i cook seperately normally omlette's with salad.
I get those little pot salads from the supermarket and pot fruit salads. Or jacket spuds too!
If i don't cook for myself i will eat crap and then the pounds pile on ;)
Griddled tuna or other oily fish is no sweat for one, and the packs of ready prepared salad and potatoes or french bread take the hassle out of preparation. If you really dont want to cook, dont as a meal of fresh soup in a carton, cheese, and bread is fine. Or have cereal and a yoghurt. If there are meals you like but Claire wont eat, use her nights off as a chance to eat your favourite. :)
Thanks everyone. I've got a few things from Tesco's to keep me going for a few weeks. I don't usually like pre-cooked meals but am going to try these. I've tended to eat stir-fry and sweet and sour chicken but you can get fed up of the same things ;) even if you really like them. Afriend at work today suggested I try Farmfoods as they do a few things, but somehow don't think the quality will be the same.

Lindylou, I work in the Factory that produces the Ready Meals/Steamers for Tesco and I can honestly say they are good. Hope you enjoy.

Yes, GO to Farmfoods :D they have their own makes of ready meals but they also have other makes too. I particularly like Pataks curries, and in Farmfoods they are the same price as their own brand. You will also find Ross, Birds Eye and lots of other makes. The prices are excellent and the choice is good. OMG

I sound like an advert!! ~ I'm not on commission honestly :)
I don't go there often enough as I have to go to the next town, but I do make the effort if I know I'll have a house full of young people.

I eat 6 out of 7 evenings on my own. I find if I cook batch of mince,veg etc freeze some fridge some. I have three nights sorted spag bol, shephards pie, chili or calaloni. so when motivation hits rock bottom all I have to do is peels spuds or cook pasta. I also buy the supermarket healthy living dishes. Just shove it in the oven hey presto. The only thing you have to do is open up a bottle of wine. Which is an excellent rewarding job in itself.

Emma, the bottle of wine sounds good :D. I think I could open that ;) Don't know about cooking and freezing, though. Sounds like hard work :o
I went to Farmfoods today and was surprised by the variety. I usually buy my frozen veg and ice cream products there, but never thought of looking at the ready made meals. Claire and I tried some for tea tonight :p I know, they were supposed to be for me when I was on my own. The plates were emptied ;)
Thanks everyone for opening my eyes. I've always been one of those people who cooks from scratch, that way I know what I'm eating. But these will do for those days I can't be bothered.
