Our 11 week Lab puppy is doing really well with her house training, I have been taking her outside every hour or so and when she performs have been using the command 'be good' and then making a fuss of her and giving her a treat. She now lets me know when she wants to go out by standing by the back door, so I think things are going well. However if we exclude her from somewhere she seems to get the hump and then pee on the floor.Also at night she is weeing on the floor (which is understandable because she is still only young and cant hold it all night) but should she still be pooing in the night-although when she does poo or wee in the night she does it right by the back door.

She sounds as if she is doing extremely well :) Don't fall into the trap of thinking she is being defiant - dogs don't think like that, she is just finding it harder to remember while she is being excluded... when you say excluded, do you just mean if you put her in the kitchen for some time out for example?

On this occassion she was excluded/ ushered out from the Kitchen, she stays in the dining room/conservatory as we have a hard floor there so any mess is easy to clean up. We want to keep her out of the kitchen because she is already showing her labrador trait as being a potential dustbin !

If you have a crate for her I would keep her in it when you are working or eating in the kitchen. She is probably weeing when she is excluded because she is a bit stressed/excited by it, not because she is defiant or making a statement of some kind.
When my puppy was nearly housetrained she would always wee on the carpet whilst we were having dinner. It wasn't a statement, she was just stressed because of the food and her inability to get at it. Until she was older, I would put her in a crate while we ate -- end of problem. I kept the crate where she could see the table, by the way.
My recommendation would be to use a crate until she is older and has more bladder control.

Thanks for your advice, we do have a crate but she absolutely hates it and panics every time that we try and get her used to it, we tried to ease her in slowly but when we close the door she just starts barking and scratching at the door to get out and we were worried that she would hurt herself. The only time she goes in is to eat and drink, do you know a way of getting her to stay calm when the door is shut.?
