We have a very timid 1 year old great dane bitch that we have just adopted, but she has never been on a lead as lived in country where owners back garden was a field, we need to be able to walk her but we have tried a loopy, harness and collar and all she does is bolt like a horse,

How have you introduced her to these things? As she is so timid I would suggest taking things very very slowly and taking the time to show her the items, and rewarding her for taking interest in them by offering her a small food treat of something she really likes (most dogs love cheese or hot dog). don't make any attempt to fasten them on her collar or around her neck or body for several days of rewarding her for sniffing them, and when she's blase about them, slowly and carefully drape it over her body - don't fasten it at this stage. Just reward her for accept it....... Keep everything light and not intense, brief and happening in alsorts of places - so she doesn't associate being in the kitchen with being tormented by you trying to get her to do stuff she doesn't want to :) The secret to this is little and often, as many times a day as possible - never push her to do more than she's ready. 10 sessions of a minute each per day is better than one 10 mins session......

Have you tried a halti head colla. just gives you whole control of the dog . and yours is a big dog so you need to be incontrol .
first make it a fun thing to wear at first by giving treats for putting it on and taking it off a few seconds after.and repeating it again and giving a treat even if she pulls away still reward her while having the head colla in your hand. then put it away in a draw then repeat it everynight a little more times every time, the dog will soon see the head colla as being a good thing (treats) then when you notice her happy with what your doing leave it on for longer. and longer each day.
Then call her into the garden and attach a lead and reward, see if she will walk a small way if she struggels take the lead off and leave her for a short while call her over and put lead on and reward.and just carry on like that.hopefuly she will see its a good thing then you can take her out and thats gotta be better then a treat! dont go for a walk with it till shes ok with it and not struggling,
Hope it helps , My freind had the same problem with a Boxer and it worked they tried a normal colla first but it dident work i think it was the sensation on his neck he dident like .
