I think it's the loose hairs/dust that come out into the air even when you don't handle the dog that make you sneeze

Dander is the dead skin cells - ie dandruff. Unavoidable, as all animals, including us, produce it.

OK grit your teeth, it is also the debris left behind by the livestock that live on skin and dead skin cells. Like 'dust mites'. These mites live on all living things, nasty or what.
