My dog has been passing stools with a creamy mucus running through them for the past few days,
He hasn't eaten anything that would produce this.

Has anybody come across this before ?

A couple of mine did this if they had too many rawhide chews also I got this effect if I fed Naturediet, although that was more like a coating of mucous

Xena,

Usually it's a sign of some kind of intestinal track problem, like colitis or just a temporary upset. I would feed your dog on chicken and rice for a couple of days and see if it goes away. If it does, no need to worry .. could be the heat or something your dog ate or even overexcitement.

If the poo turns runny or bloody then probably a trip to the vets would not hurt for some antibiotics.
