Both have had all testing done and are completely healthy. Both are about 3 years old and same size. They both are very interested in mating with each other. She is now 10 days in heat.

They naturally try mating with each other the second they see each other. The only issue is, the stud will mount her, but jumps off of her within 10 seconds each time. They have not been able to tie together. I can tell that he becomes erect, but I can't tell if he is even penetrating her. Does anyone have advice what can be done?

You can have someone part the bitch's vulva and help guide it towards the penis.  Don't touch the stud's penis, but help line the other end up for him... If the bitch's fluffy tail or feathers are getting in the way, bandage the tail up and give her a haircut round there so you can see better what's going on....
