My new GSD has a floppy ear tip, he is 11 months old. Is there anything I can do as I would love to show him ( in fun classes ) and possibly put him to stud in the future. The ear stands erect sometimes, but mostly flops over.

Havn't done this myself so I can't vouch for it but I've been told that calcium tablets can bring the ears up properly. I know a couple of mal people who have done this with some success.

He is a bit old, but you can try taping the ear up for a couple of weeks and see if it stands up by itself afterwards.
You get a large sponge hair roller or similar, place it up in the ear, sort of fold the ear around it and tape around with surgical tape. You may need to use one of those plastic collars around the dog's neck so it cannot scratch at the tape.
Best thing to do is to ask your dog's breeder, however. He or she can also advise you on whether or not your dog should be used at stud.

I don't think Lupin would stand for his ear being taped LOL!! He is a wee bit hyper at the moment! I spoke to the breeder and she says he was fine as a pup and the former owner says he was fine up until a few months ago when it started flopping over for no reason. I am taking him to my vet next week so will have a word.
