When making an apple crumble, do I have to cook the apples or can I put them in raw like in a pie ? TIA

I always part cook them first with cinnamon and some maple syrup.

I usually nuke them for a couple of minutes first to soften them, before adding any cloves or sultanas or spices.

I've always understood that you should cook fruit before adding the sugar otherwise it doesn't smash down properly ?? I never add sugar to the Bramleys as I feel that there is enough sugar in the crumble. I also never add sugar to custard if it is going to be eaten with something sweet :)

I do them raw with a little sugar but I use less than the recommended for the crumble.

I think Mum always made hers with stewed fruit.

Last year I tried both ways and now cut the apples into wedges, sprinkle with sugar and cook from raw in the pie as I prefer them to still have a bit of shape when the crumble is cooked.

I slice the apples very thinly and they go in raw with a bit of sugar and cinnamon. Works fine for me!
