Gone from NO raspberries last year due to the wonderful summer we didn't have, to loads this year.
We are eating fresh raspberries, I have made about 5lb of jam but any good ideas for about another 1½ /2lb - preferably something that will freeze :-D

Freeze them on trays and the bag them and use them for smoothies and fresh raspberry milkshakes.

Lol I have also made homemade limoncello.the recipe asked for Almalfi lemons so bought a shed load of them online ! I have a freezer compartments full of frozen limoncello and one full of frozen lemons as I had to buy in bulk !!

I made raspberry coulis a few years ago, think it is pretty much equal weights of fruit and sugar, cooked gently until liquid then strained into bottles. Great poured over icecream!

How weird, I've been looking for these myself this week as I have loads too :-)

So far I've just made some crumbles to freeze, thanks to youtube I am using the 6-3-3 squad formation :-P  which means 6 units plain flour, 3 units sugar, 3 units butter.  Thanks to a friend of mine who is an amazing cook, I'm also using demerera sugar and Trex butter, she assures me these are the very best choices for crumble.

For the raspberries I just squish them into the tray (I'm using those foil trays with lids for the freezing, Morrisons do decent big pie ones) to about 1/2 or 3/4 up the side, then chuck some sugar on to sweeten them a bit as mine were getting a bit tart having been picked up to a week before I used them, and then poured the crumble on top.

I've not tested it yet - I made a dinky crumble for testing, which I'll be eating today :-P - but it certainly looks nice!

Must remember that for the crumble, my crumble topping never comes out right.

My neighbour gives me loads of veg and fruit from her garden, in exchange for eggs from my chickens, so i'm snowed under with rasp's and white turnips.

Trex!! Haven't heard of or seen that for years it used to be lard I think. Had a look and it doesn't say what it is exactly lower in saturated fat than butter so not butter???

Nor mine - I have NEVER been able to do crumble.  Found recipes the other day and still couldn't do it - I've got one 'crumble' that's more of a sort of soft pie lol!  So I youtubed and found that - perfect crumble first time :-D  I did it by weight too, I did wonder after I'd mixed everything if it should have been by volume but it seemed a lot of sugar so I left it, absolutely fine.

Re. Trex - yes it is, vegetable lard, butter was the wrong word sorry!  I got mine in Morrisons.

I'm really jealous! My raspberries are rubbish this year - they were quite reasonable last year - the few I have are tiny wizened little things, not worth the picking. :-(
