What can cause the mouth (lips/roof/gums) to lose all it's colour? Not gradual either, seems to have happened in the last month?

It could be anaemia if the mouth and gums have gone pale. I would see the vet and ask for a blood sample to be taken.
Have you noticed any other changes in the dog ?

No changes that I have noticed. I've booked the vets for the morning.

Vitiligo can do that... not common, but I understand it occurs in some breeds.
