Hi!  Having a family day at the races on Easter Monday and taking a picnic.  What are your favourite foods to put in a hamper.  Half family not meat eaters.

A decent bean salad, is always very satisfying, easy to put together or just look up here on the 'net for a recipe idea :)

Cocktail sausages, Pringles, picnic eggs, chocolate (if not too hot). No, we're not really healthy eaters in my family..... ;-)

Spanish omelette (tortilla), made traditionally with onions & potatoes. It's much nicer than you think when eaten cold.

Home-made hummus is also very nice! Can be served with veg to dip in, or is a nice sandwich filling. I make mine from scratch with dried chickpeas cooked in the pressure cooker, blended with olive oil and garlic (don't usually bother with tahini).

It all depends if it is a finger food type picnic, or  a more substantial meal with cutlery.  Also expected weather - sometimes chunky sandwiches and a flask of soup is the best bet!

Falafels - really easy to make, taste delicious hot or cold, can be spiced up as much as you like, and can be stuffed into pitta bread or just eaten with fingers and dips.  Also great with salad

Lentil loaf is also great for non meat eaters as picnic food.  If there is a danger of the food getting a bit warm in the car before hand then meat-free food is often a wise choice anyway.  Lentil loaf keeps well and gets better.  My sister used to make really good scotch eggs with lentils instead of sausage meat - reminds me, I must ask her for the recipe.  I'm suddenly feeling hungry! :)

My mum always cooks up huge boxes of meaty sausages with extra mustard and honey.  It makes them all sticky so fun for fingers or for putting in hot dog rolls

I always like cake at picnics too - nothing fancy, or with too much icing, so lemon drizzle cake generally gets my vote but Nigella's clementine cake (flour free so perfect for gluten intolerance) is my runner up choice

Home made chicken curry pastys :) super easy and very tasty.

Non meat wise a nice cheese and onion quiche or pear, walnut and dolcelate tarts. nom!

Used to live in a shared house in London where one of my veggie co-habitors made Scotch Eggs using Sosmix [soya based sausagemeat substitute]... surprisingly good!
