I'm surprised you don't have any answers yet.  I wouldn't start weaning until at least 3 weeks, and even then just a taste.  But then I didn't have 11 pups, so that might make a difference as they may need a bit of supplementing earlier if they're too much for mum.

Hopefully someone in a bigger breed or breed with larger litters will see this and be more helpful.

I tend to start mine with a bit of mince (I used Natural Instinct Puppy Mince this time and they loved it).  Give them a meal of mince then let mum take over.  And I also started supplementing with some puppy milk for them to lap just to supplement mum, but only after 3 weeks or so.

I have a large breed and wean them at 3 weeks. I've used RC in the past but this time used Fish4Dogs, soaked at first and mashed into a sloppy porridge mix and one meal per day for the first few days then gradually raising to 5 meals per day. As the weeks go by I add different food, and less soaking. I've used puppy nature diet and they loved it. For their first meal just to get them used to lapping people might use puppy porridge, I preferred baby rusks mixed with puppy milk.

There have been a lot of threads on this topic so a search will bring them up as there are as many versions as breeders.

I give mien their first taste of mashed puppy food with puppy milk at 18 days, but if a litter were gaining too slowly (not increasing daily weight gain) then I have started as soon as eyes are open rather than try to supplement by bottle.
