No slaughterhouse staff would indulge in completely illegal and barbaric cruelty if they know they were being filmed, surely. Covert filming is used by journalists all the time, not as the exclusive means of proving guilt or as a 'fishing' tactic, but as a powerful tool for uncovering corruption, cruelty and illegal practice and thank goodness for that.
