You said in a previous post that you use TPMS - they have sliced tongue in their online catalogue.  Is it currently unavailable?  I don't know what they charge for it.

My grandma used to buy a whole ox tongue from the butcher and boil and press it - not hard to do but looked very unpleasant, perhaps you could approach your local butcher?

I think that kind is salted though, the ones I have seen in local butchers certainly are.

Ask your butcher for a whole one, I get them from time to time from mine, I do ask them to chop it up, i'm not squeamish at all but hacking up a whole tongue is a bit hard going.

No, it wasn't salted, it was exactly like the stuff you buy at the cooked meats counter in a supermarket.  She used to boil the whole tongue in a great big pot with a little salt and pepper, when it was done (sorry no idea how long it takes) she drained it and then peeled off the skin (that was the bit I hated) then put the rest in a big dish (pudding bowl type of thing) put a plate on top and weighted it down with the weights off the scales.  When it had cooled it was turned out of the dish and sliced - seem to remember the accompanying salad was slightly damp lettuce, hardboiled eggs sliced in one of those thingys, half a tomato and some beetroot , all served with Heinz Salad Cream.

you added salt peter ( I don't think it is available any more)to it and then got a good pink colour.
Sometimes you can get lamb tongues. A butcher was telling me you can no longer get sheeps head, these made a great brawn.

That may be why the ones my Grandma cooked were a rather unappealing purple/brown - she didn't add anything other than a pinch of salt, not even pepper!
