Well not really as the breed has evolved (for good or ill) though some are less exaggerated than others. It will take a few generations of selecting dogs with slightly longer muzzle, less nose wrinkle etc before the lay person would notice much difference.
The problem is people don't notice things changing until it has gone long way. this is why new breeders really do need to look back and see from what their breed has come and where ti is going and decide whether a step back is not needed.
Yes a lot of breeds were less exaggerated, but at the same time look at the old pictures and footage and you will see a lot of structural faults in many breeds like queen Ann fronts, cow hocks etc that have seen improvement some of ti is nutritional.
In the short term someone who likes pekes but wants a less hyper-typical one might consider a Tibetan Spaniel or Japanese Chin.
Otherwise I think visits to Breed club shows where a large cross section of dogs and their breeders can be found and you can research to see which dogs have a more old fashioned (less extreme) appearance question the breeders to see if this is in fact their aim, ans get on their waiting list for a puppy and choose one that is less coated and moderate.
For someone who feels really strongly then they have to get in there and have their own breeding program, and critically persuade otehrs to feel the sme way, as you can only breed from what you ahve available, but it will be a work of several decades, adn peopel are not in general in breeds logn enough.
It took that long to get to where any breed breed is now, so there is no quick fix.
