After getting all my ingredients to make elderflower fizz / cordial , I missed to pick enough flower heads in time!
Do any of you know any recipes I can make using elderberries instead? Could I just make the fizz / cordial with the berries instead of the flowers or is the process completely different?

Elderberry wine or champagne ( think that uses berries). Elderberry jam mmm nice or elderberries with apples as pie. Freeze for later use

I made Elderberry Wine - fed it so it would be strong :-D
21 years on we drank a bottle at my daughter's 21st birthday, it was lovely! Like a really good sherry :-D
The earlier years were good too, very fruity :)
My vote is for Elderberry wine :-D Can I test it for you? I consider myself an expert :-D

Yep i agree we made elderberry wine and then also drank it years later so strong it could blow your head off

Sadly not, but my brother has started making wines from wild-picked fruit and Christmas is coming :)

The two best wines we have ever made were oak leaf and then pea pod. Used to make a lot of wine many years ago - I don't drink myself but vividly remember a family gathering where it was tried straight from the demi-john and all those who imbibed loved it so much they paid a hefty price the following morning :-)

LOL Parsnip wine is known in our family as Tanglefoot for obvious reasons :-D
