I am having a Mexican themed evening.

Starters, drinks, mains all sorted but can not find a good dessert. Has any one got a tried and tested recipe that can be made tonight in advance, we are all out together in the day and back to mine after, so want as much as possible done in advance. I know the fried dough is traditional but far to heavy would like something light.

You could make Fruit Fajtas! (pancakes with caramelised fruit and cinnamon and a bit of creme fraiche).

P.s have you ever had the Churros (the fried cinnamon dough)? it is MEGA. We always have it at our local mexican served with the traditional mexican hot choc (just pure melted choc!) and then feel sick sick for being such gluttons!

I could not find an easy recipe but while shopping I decided on this.... I bought a really good vanilla ice cream. I have made balls using a mash potato scoop. Rolled the balls of ice cream in mixed chopped nuts and sweet hazlenuts  then put back in the freezer.To serve I will sprinkle with cinnamon and serve with skewers of strawberries, blue berries and juicy fat sweet black berries, if the skewers don't work I will just put the fruit in a fancy glass with ice cream on top... I think this will be ok.

Reading back on what I posted, it seems that Crème Caramel (called "Flan" in Spanish speaking countries for some odd reason) would be easy to do, or buy ready made, and authentic. And I could eat that for breakfast dinner and tea.
