Dose anyone have a recipe for liver cake
- By Moomins [gb] Date 18.06.10 05:20 UTC
Hi Peppe,

I have made this before but cant for the life of me find the receipe..but think I can remember most of it :)

Lambs liver
plain flour (1/2 cup approx)
1 egg

Put the liver in a food prossessor/blender whiz it up not too much you want a kind of smooth paste but its ok if there are a few larger peices in there.. add to the flour and egg mix together.

Get a baking tray, place one of those greaseproof/ baking sheats you can buy so as it doesnt stick empty the contents out onto the baking sheet/baking tray. Smooth out to approx  an inch to inch and a half thick. Place in a pre-heated oven 180 degrees for approx 25/30 mins.

My recipe has some garlic in, and I just make it in a cake tin and then slice it and dice it!

Definitely add the garlic!  You can also cook it for 3 mins in the microwave : )

I often use tinned tuna instead of liver as this saves all the hastle with raw liver.

Doh! yes forgot the garlic :) knew there was something else in the receipe!!

Oh yes, Henry adored it made with tuna instead of liver, bless him he had weird tastes! :)

OooOoo, never thought of using tuna before! Must give it a whirl-my two LOVE liver cake, and I put loads of garlic in (but make it in a big batch and donate dome to friends dogs). Not a clue about measurements though-it's normally 2 or 3 packets of liver, 2 or 3 eggs, a bulb of garlic, and flour til it's 'right'.

I also add dried oregano to mine. It makes it smell more herby and takes away some of the unpleasant liver-y smell when cooking.

Ah yes, the smell - I left a basket of clothes in the kitchen when I had some in the oven - cue rewash for clothes :-D

when cooking for dogs, you can add the whole egg - shell 'n' all if you like.  I just crush it first in a pestle and mortar (or use a rolling pin) as the food processor doesn't make the shell small enough

this is the recipe i use.   you can microwave it too.

LIVER CAKE RECIPE.

8ozs Liver [preferably Lambs]
4ozs S/R Flour
2 Eggs
2 Cloves Garlic/ or 2 tsps garlic puree.

Put all the ingredients into a blender until the mixture is smooth, pink and runny [not too rigid a requirement if you prefer to make it a bit chunky' Pour into greased swiss roll type baking tin and place in the oven [Gas Mark 4] for around 30-40 minutes.
Leave to cool and cut into bite size pieces.
It can be frozen
