I usually buy my soup mix from the supermarket but picked a couple of bags up in Holland & Barrett yesterday. I soaked a full bag last night and I'm amazed at how much they have expanded - far more than the supermarket stuff! So, I have a bowl full of pulses - way too much to go in my chicken soup and I am wondering how long they will last before cooking? I will be making a veg soup on Monday for the boy's lunches and wondered if they will be ok until then and if so, what will be the best way to store them, leave them in water or rinsed and drained in an airtight container in fridge?
