My parents Victoria Plum tree has given us a bumper crop this year and we both have kitchens full of plums!
Anyone have any good plum jam recipes, or other ideas for them? I've de-stoned alot of them and frozen them tonight but we'd like to cook and preserve some too.
Look forward to your suggestions :)

Sorry not jam but one of my favourites that you could make too.
Usually made with cherries but equally good with very ripe plums ( the colour is best with very ripe fruit)
A simple French batter pudding.
300g ripe plums (Victorias best)
300ml milk
3 eggs
60g caster sugar
60g plain flour
Half-tsp baking powder
Pinch of salt
Half-tsp vanilla extract
Icing sugar for serving
Method: Heat the oven to 180C/Gas 4. Remove stones and arrange the plums in a single layer in a shallow, lightly buttered 22cm glass or porcelain baking dish. In a food processor, combine the eggs and sugar and beat until smooth. Add the milk, salt and vanilla extract, and whiz briefly. Sift in the flour and baking powder and blend for one minute until smooth. Pour the batter over the plums until just covered (you may not use all the batter) and bake for between 30 and 40 minutes, or until puffed, golden, and set. Rest for ten minutes (it will sink slightly), then dust with icing sugar and serve warm, straight from the dish.

LOL we too had this conversation yersterday as we are overrun with plums this year, and the pears and apples are doing well at the moment, infact im sick of the sight of apple crumble :-D

I had a go at jam making for the first time this year, with the help of a good friend. Its so easy!!!
Cut the plums in half and remove the stones
Put in a large pan with equal amounts of sugar and a good squirt of lemon juice
Boil well for 15 minutes. They need to be bubbling rapidly
Put a saucer or tea plate in the freezer so its really cold.
After the 15 mins are up, take the saucer out of the freezer and put a teaspoon of jam on to it and leave for 2 mins. It should set in this time(mine did) if not it may need a bit more boiling. If the mixture is quite "frothy" add a knob of butter to get rid before putting it straight into clean jars. It will seem quite runny but will set as it cools.
Screw down the lids tightly and leave to cool. It will take quite a while.
The "button" on the jam jar lid will suck in again as it was when you bought it. When the jam is cool it can be stored in a cupboard until you are ready to use it.
No need to use any fancy sugar, ordinary stuff will do. GOOD LUCK!
