It would depend on whether you are feeding it instead of other food or feeding it in addition to dry food - are you feeding a raw diet or supplementing kibble?
When feeding a raw diet of meats from varying species the normal guideline is to feed 2-3% of an adult's bodyweight to start with and adjust up or down accordingly. I have never fed just tripe as my dogs get a variety of different raw meats so am not sure if that would differ if you are only feeding tripe.
If you are feeding the tripe as a supplement to kibble then I would presume you would just add some to the kibble and then adjust up or down depending on whether your dog gains or loses weight. I have never fed this way so am not entirely sure but that is how I would go about it .
