Since its cold, and my OH likes a hearty meal when he gets home ,thought about Beef Stew for tea, and hopefully there will be enough for tomorrow evening!

Anybody has a quick easy recipe for it, thanks

Stews by their very nature are quick to prepare but slow to cook! 

What about oxtail stew in guinness?  Get some oxtail pieces, braise them in a pan to seal with flour, add to a casserole along with the chopped up veg of your choice: onion, swede, turnip, carrot, parsnip, carrot....whatever.  Add a can of guinness and a couple of oxo cubes.  A can of chopped tomatoes & garlic. Shove in oven on low heat and leave for as long as possible - 3-4 hours ideally. 

You could also add some homemade dumpllings 30 mins before the end!  (Atora have the recipe on the side of their packet!)

Thanks Jan, just bought some stewing steak, sweetheart stout, and heap of veggies, so away to prepare, and then leave it to cook til 7pm!!

brown your stewing steak and put in a casserole dish or slow cooker. then in the pan you used gently cook some onions in a big nob of butter till they go translucent. then add a bit of plain flour till it forms a lightly browned mush- the onion should be completely degenerated in the roux.

add to this a pint of beef stock, bring to the boil. add mustard, salt, pepper and a couple of bay leaves if you have them.

pour your gravey over the meat and cook on a low heat for a few hours.

seriously good stew :)

when I make beef stews I also add a tin of Beef Consomme which also helps to make a good beef stock.

So much for leftovers to save me cooking tonight, he scoffed the lot!!  And 4 Dumpling, mash and cabbage!!

Well he can cook tonight, I have my Riding lesson tonight!
