Anyone got any good recipes for a quick risotto??
Have a race tomorrow and someone said it is good to eat the night before.

I always use this recipe http://www.bbcgoodfood.com/recipes/2818/ovenbaked-risotto-.jsp.  I also add some peas and wild mushrooms to it before putting it in the oven and I serve it with a rocket salad :cool:

I do mine on the stove top and it only takes 25 minutes.

I cook the onion in some butter then add chopped peppers and quartered mushooms. 

I then add the rice and stock and put lid on for 20 minutes until it has absorbed most of the liquid.

Then I add the chopped cooked left over chicken or ham and return to the stove to warm through, adding a  little more stock if it has all cooked out.

My today is your tomorrow but I PM'd a recipe to you anyway.  You might like it for another time.  It's my version of a recipe from the cookbook, "Power Eating" which was written to help athletes prepare quick, easy, energizing nutritious meals.  It's done in the microwave and takes 30 minutes tops from preparation to swallow but it is kind of fiddly.  The original had mushrooms or peas but I use scallops and asparagus.  Good luck in the race.

Basic risotto for me; saute 1 cup of rice for a couple minutes. Chuck 4 cups of liquid on and walk away. I only stir it every few minutes until almost all the liquid is absorbed, about 20 minutes, then stir constantly for the last 5-10. I don't stand over the pot adding small amounts of liquid at a time. I've been told it's very good despite being cooked improperly. :) My favourite combination is porchini mushrooms; use the soaking fluid as part of the 4 cups. For the rest use chicken stock, 1/3 cup white wine and saffron threads. Yumm. Good luck with your race!

Did a bit of everyones, cooked it on the stove and it was LOVELY :D :D

I didnt realise how easy it was to do a risotto.
Will deffinatly be cooking it again :D :D

It is one of my favourite meals if just cooking for one as you only use one pan (and the kettle to boil water), and if your lazy like me you can eat out of it too :eek:
