Chop mushrooms, fry lightly in a little butter or oil, add stock (vegetable or chicken) pinch of garlic (fresh or granules) tiny pinch of thyme, add double cream to taste and season with white pepper and salt to taste :) If you like thicker soup add a little cornflour and heat till bubbling MMMMMMMMMM
Quick mushroom soup (tastes like campbells)
One tin of mushrooms (try to get the ones which simply have salt and no preservatives or extras)
small carton of single cream
pinch of garlic, shake of ginger, suspicion of thyme
stock cube or bouillon + water if needed
blitz mushrooms with a chopper use the liquid from the tin and you won't need salt ;)
heat in saucepan adding reduced salt/no salt stock/bouillon, garlic, ginger and thyme.
when bubbling add cream, heat gently.
If you like your soup thicker add a little cornflour with the cream and heat till bubbling
serve MMMMMM :D :D
I LOVE mushroom soup, can't buy the tins because they all have wheat in them :(
