I have changed my westie from junior to adult food.  She is on the James Well Beloved (Duck & Rice kibble) which she has loved since a puppy.  She (Lily) is only 7 months so I am a bit concerned that I may have changed her over too early?  She loves the food and I add a small sensation of ceasar to give it some extra taste and meaty flavour - is this ok?  She is my first westie and is utterly adorable but is now coming into her first season (aaarrrghhhh!!!)

I don't think that you have changed your puppy over too soon - as long as you have introduced the new food gradually into pup's food it should be OK.  I'm more concerned with the adding of Ceaser to give the food some more flavour - JWB is a complete food and adding additional food could cause problems, such as weight gain, to the pup unless you reduce the amount of JWB!  If the pup loves JWB you shouldn't need to add anything to it.  While I dont have a westie my grandmother has and she is also happily fed on JWB ( the dog - not gran!)without any additional wet foods, as she can be prone to skin irritations.  However there's nothing wrong with giving the odd treat ie chicken, as long as you watch her weight and condition but don't give too many as you might end up with a fussy girl.

I wouldnt add any tinned meat either. The complete food in its self will have flavours your dog should enjoy. Id stop this before the dog becomes too used to it and refuses to eat without it.

I know people who keep on Puppy for a full year, or Junior for a year to 18 months, and others who change to adult pretty quickly (by 4-6 months) so really it's what's working best for your pup.

As for adding a bit of tinned, if you don't mind it's not a problem.  We have always added a few tsp of tinned to our dry food to make it more interesting.  We account for it in the daily ration and if you intend to keep doing it what's the harm.
