Pastryless quiche! Make as normal quiche but without the pastry (funnily enough). Seriously, it's yummy. :)

I'm eating lots of fresh fish and meat rather than my usual processed foods and am having it with stir-fry veg - peppers, mushrooms, beansprouts and baby corn - it really filling, colourful and is tasty too and best of all only takes about 5 minutes to stir-fry!!

If anyones got a sweet tooth, here's a good one for you. (It's fat free)
Banana and sultana cake.
(1 serving = 1/2 inch/ 1.25cm slice)
1Ib 3oz (475g) ripe banana's (5 large)
2 eggs, beaten
6oz (150g) brown sugar
4oz (100g) sultanas
8oz (200g) self-raising flour
Mash the bananas in a mixing bowl, add the eggs, sugar and sultanas and mix the flour in. Place in a lined 2Ib (800g) loaf tin or cake tin.
Bake for 1 1/2 hours in a preheated oven at 180*C, 350*F, or gas mark 4. Store in an airtight tin for 24 hours befor serving. Suitable for freezing.
Must admit I've never waited the 24 hour, I can't wait to have a slice, usually with ice cream (low fat of course). Yummy.
For those folk who like something savoury, a trimmed bacon chop with salad, sprinkled with a teaspoon of fresh grated parmesan (lots of taste, but a little goes a long way),as does lemon juice and chillies, lots of taste and minimal calories :)
liberty (always on a diet)
