I have owned my very first Stafford only 2 Yrs.

She is a very highly spirited bitch but can show signs of timidness with humans, she has even backed away from another terriers dominanace, is this normal for a Staffordshire?

far from it - staffords are renouned for being extremely human friendly and never ending tanacity (sp)

sounds like yours may have had some bad experiences maybe earlier in life?

She sound a little nervous to me and this could lead to fear biting :( 

Did she meet lots of other dogs and people as a young puppy? Maybe it's just a matter of socialising her a bit more - maybe joining an obedience class or something to give her confidence would help.

Have you had your Staffy since a pup ?
I have met some staffys that tend to "flinch" slightly when being stroked even though they have never been mistreated
as for backing away from another terriers dominance  not every Staffy is dog aggressive and wanting a fight
