Would have thought that living with a Wolfhound and living with an Irish Setter could not be more different. As a general rule Wolfs are laid back and a bit on the lazy side the antithesis of the Irish Setter. Are you sure you are not going to find the IWH a bit to stayed. Would suggest you contact a few breeders and go and visit to get the feel before taking the leap into a new breed. If you know all that sorry, felt I had better say something.

I haven't got personal experience of a full Wolfhound but I've got a Wolfhound/Beardie cross.
He has been the most amazing dog I have ever had. The beardie in him has lengthened his coat (but not as long as a pure beardie) which is a pale silver grey, and also given him an extra playfulness but the wolfhound has quietened down the excitability of the beardie. He is a really gentle, laid back dog, very intelligent, easily trained - he's got his KC Good Citizen Gold and has done agility and working trials work. He was easy to house train and has never been a chewy/destructive dog. He is now 8 and still loves to play and train. He's good with children, dogs and adores people. He is a lot quieter than a Red Setter though.
