would it be better to with hold water some of the day from my 10 week old standard poodle pup as she seems to drink just for the fun of it!!

I would always advise leaving water out for your pup .
If you are concerned that she is drinking excessively then I would take her to the vet just to put your mind at ease )

By the way is your pup on dried complete as this can make dogs thirstier
