Does anyone have a nice recipe for Broccoli and Stilton soup? I have scoured my recipe books, but drawn a blank.

Stilton is a very smelly English blue cheese. Shall I post you some? I think your american mail room would take one look at it and yell germ warfare :D (Do you know what Roquefort is? It's a bit like that, but not french and therefore better ;) )

Is Stilton as dry as Roquefort cheese? Hubby loves the taste of it, but I don't like its crumbliness :rolleyes:
Perhaps, I'll ask the British Shoppe on base about it :) (RAF building) Yep, truly international, we is :D :D Tiny, but bigger than the "Canada store" :)

No Sara, Stilton, when ripe is served with a spoon and is wonderfull, 'squse me I'm dribbling, must look for a dry biscuit. J:)
PS. It is wonderfull on a rare steak too, oh, dribbling again.

Hi 9th,
This is generally my Xams soup in fact is quite regularly my Sunday soup. Had a look at the recipe from Sara and this is near enough how I make it. Sometimes lees cheese and wine.

Doesn't Marks & Spencer do it? Get a few cartons and pretend it yours - talking of M&S and soup - try their organic White Onion and Cider soup - its scrummy! I can make good Lentil soup myself though - not always shop bought!

I do like rare breeds. Just look at my choice of the TH :p
I do like to cook a lot though and I'd feel way too guilty to pass something off as my own if it wasn't. I had a strict mother and so I'd be scared of being found out.

Broccoli and Blue Stilton Soup for 4.
500g Broccoli or Purple sprouting broccoli,chopped.
100g Blue Stilton,rind off and cubed.
1 litre Water
25g Butter.
1 Onion,chopped.
1 Potato, peeled and chopped.
Freshly grated Nutmeg
Salt/Black Pepper
Walnut oil to serve.
Heat butter in a large saucepan and stir in onion and potato. Cover and cook gently for 5 minutes, then add broccoli and cook for another 5 minutes. Add water,bring to boil,season and simmer for 15 minutes.Strain and keep liquid. Put cooked veg in processor and moisten with a little of the reserved liquid. Process until smooth. Very slowly add/stir in by feeder tube,the remaining fluid. Strain the soup into a clean saucepan and reheat until nearly boiling. Remove from heat. Stir in cheese until melted and then add seaoning and nutmeg to taste. Serve in warm bowls and trickle a swirl of walnut oil on top.

Will have to liberate my recipe book from Keeper's drooly chops when I get home!

Surprisingly, our local Safeway sells Stilton, sometimes in little ceramic pots. I say "surprisingly" because our local S/w is a strong contender for the "Worst on Earth" title.
Another nice thing you can do is to scoop out a little well in the centre of the cheese, then pour in a slug or two of port.
