Does anyone have any ideas on a reasonably simple veggie meal for Christmas dinner please ? I'll be at big sis for Crimbo this year, she's vegetarian, so I've offered to cook something and bring it down, the rest of the family are meat eaters, so it will be just for the two of us.
One of my favourite veggie meals is spinach and ricotta cannelonni, you can make ahead and just reheat on the day. And it's not over complicated, or were you thinking of something more like a nut roast so you can join in with all the christmas veg and spuds etc?
I think if you want it to be easy - and go with all the other veg - then you can't go wrong with a nut roast or lentil loaf. The advantage of both of these is that you can use traditional flavourings such as sage and onion or carrot and rosemary. Look at adding whole chopped chestnuts for a lovely christmas taste and then slice it cold with cranberry sauce in a sandwich later!
Another option is to do a casserole with puy lentils which can also be served with the same veg as everyone else. This type of casserole gets better with re heating and leftovers can be stretched into soup and served multiple times...
Yum the Simon Rimmer one looks lovely and is now on the menu list for our Boxing Day feast as we have a veggie guest ( although she is a turned veggie and enjoys a good steak now !! ) but like to still give her a veggie option,
I like the look of the double stuffed Christmas log. I had decided on a mushroom melt wellington, but big sis has been having some stomach problems in the past few weeks and she may be lactose intolerant, so if she is, I think I'll go with the log :-)
