Where about on the hind legs are stifles and what is well bent?  Can anyone describe please?

The stifle is the "knee" joint of the hind leg. Good diagram here:

Well bent is called for inmsome breeds, meaning a good angle at the joint, between the upper and lower thigh bones. Straight stifles have hardly any noticeable bend at the knee.
