I am looking for a light fluffy mousse receipe to serve in shot glasses. I have used Rachel Allens one before but if I remember it was quite thick and not airy enough.
Anyone got a good receipe that is tried and tested? If it has raw eggs that's fine.

My Granny's chocolate mousse is the best ever - she used to serve it in tall thin tumbler type dishes. Rich, creamy & chocolatey.....

1 egg per 2 people
To each egg: 2 oz melted chocolate, 1 tsp caster sugar, 1/4 pt or a little less whipped cream (to taste) (we use extra thick double as we're too lazy to whip it!)
Optional rum (we never bothered)

Mix egg yolk with melted chocolate & sugar. Add in whipped white (and rum). Fold in whipped cream - about 1/2 to 3/4 of quantity of mixture. Put in bowls, store in cold place, decorate with whipped cream. Best done day before.

Thank you, sounds similar to the receipe I have, but you heat the cream and whip the eggs whites.
I have made them tonight and hope they last til Saturday. At crufts tomorrow so no time for preparation for dinner party of 10 on Saturday.

That's worse than my weekend - off to a B&B tomorrow night, Crufts Friday, friend's party on Saturday and mother-in-law lunch on Sunday!!! Good luck. :-)
