At a show recently, someone made Parsnip Cake, and it was lovely, anybody have a good recipe for it, so I can try and make it?? :)

You can use any carrot cake recipe and just swap it for parsnip.  Alternatively here's a link for vegetable cakes (inc parsnip muffins) that I sent to my mother in law recently so she could make the chocolate and beetroot one.  She says it worked perfectly.  Sadly we're too far away to taste test them for her :)
