I started a diet on the 9th March and when weighed on the 15th I'd lost nearly 11lb... (just a little boast)
It involves drinking a protein shake for 2 meals a day, which are fab and eating a protein and veg meal in the evening. Up til now I am sticking to the chicken as its low fat and high protein and either salad, or veg alternating it daily. As I cannot exercise (I'm in a wheelchair) I have been advised to stay away from carbs such as bread, potatoes, rice, pasta.
So here comes the question- what sort of recipe ideas can you give me that involve chicken and veg, with little fat and carbs?

Stir frys.......
Typically I would add onions, peppers, and pretty much what ever else is around, and then bean sprouts and loads of soy sauce.

Have you looked at some Mediterranean dishes when we lived in the med we only really ate fish and chicken. Oh I love soups its really filling and just fill of veg you can oven bake pepper and tomatoes to put in.

I have a Thai aunt who only really eats chicken and veg as its the staple diet out there, so have a look at some of those recipes lots of spice but very healthy and a bit of fun to cook.

Veg soup! I don't eat meat so chicken would be out for me but soup can be so filling and there are loads of different varieties!

This is very true but they also eat a great deal of rice, & look upon the rice as the staple, with the meat/veg as flavouring for the rice.

quick and easy   ..I eat a lot of fish usually baked in the oven for 15mins and serve with veg or salad. I especially like salmon with low fat philadelphia or a bit of chilli sauce

You could make curries and maybe use turkey instead of chicken for a change (plus it's often cheaper than chicken and is also very lean).  Use yoghurt to make them creamy rather than cream if you like creamy curries.  Try chilli with extra lean steak mince, or turkey mince, bulked out with vegetables.

I also agree with what everyone else has said - can't go wrong with soup!

Oops just noticed you asked for chicken recipes and I've given you everything but lol

Thats great guys, turkey is fine also, its just about the same. I just have to stay away from game poultry as its quite fatty and lamb.
